Chocolate Biscuits

A great dairy free version of an easy recipe


225g Dairy free spread (my favourite Pure Sunflower spread)
110g Castor sugar
1 teaspoon vanilla extract
50g Cocoa powder
225g Self raising flour

  • Lightly butter several baking trays or cover with baking paper
  • Cream the dairy free spread until soft and beat in the sugar and vanilla extract
  • Gradually work in the cocoa powder and flour to form a smooth dough
  • Divide the mixture into small pieces and flatten for round biscuits or roll out with a floured rolling pin and use shaped cutters for extra detail
  • Bake at 180 C for 12 - 15 minutes 
  • Leave to cool slightly before transferring to a baking tray (if they don't get eaten before then!)

 I can't wait to make these again when I have more free time and 
use a piping bag to ice with pretty patterns
