Lactose Free Muffin Recipe

 2 cups Plain Flour
4 teaspoons Baking Powder
1/2 teaspoon Salt
1/2 cup of Sugar
100g Dairy Free Margarine (eg Pure Sunflower)
1 cup Lactofree Milk 
1 Egg (beaten)
1 1/2 cups fruit or dark chocolate chips
  • Mix all the dry ingredients in one bowl
  • Melt the margarine in the microwave (only requires 10-20 secs)
  • Add the melted margarine, milk and beaten egg to the dry ingredients
  • Mix until you can't see any flour, it doesn't matter if there are lumps
  • Fill muffin cases 2/3 full 
  • Bake at 200'C for approximately 12-15 minutes
  • Allow to cool and use chocolate fudge recipe previously blogged to decorate the muffins
  • Sit back and eat!
This is the easiest muffin recipe I've ever made. Have fun and enjoy!
