Delicious Dairyfree Chocolate Mudcake

It is a reassuringly nice surprise to find so many supportive and friendly people on social networks, Twitter and Facebook. This recipe was kindly donated by one of my new friends, thankyou Hilda C @tea_choc on Twitter, may your week be filled with yummy dairy free delights.

200g dark dairy free chocolate
200g dairy free margarine (I use Pure sunflower) and a little extra for greasing
200g sugar
4 eggs
1 teaspoon baking powder
1 desiliter flour
a little vanilla extract if desired

  • Grease a 23cm cake tin (N.B. a springform base tin is best as the mudcake can't be turned up side down)
  • Chop the chocolate in to pieces and melt together with the margarine in a bain marie (be careful not to get any water in the mixture) let it cool a little, add the vanilla extract if desired
  • Mix the flour and baking powder in a cup
  • Whisk the eggs and sugar in a different bowl until thick white foam
  • Stir flour mixture carefully into the foam
  • Then also stir melted chocolate mixture into the foam
  • Pour the mixture into the greased tin
  • Bake at 175 C for 15-20 minutes
  • The cake should be soft in the middle so be careful not to overbake
  • Let the cake cool and serve with fresh strawberries and dairy free cream
The quality of the cake depends a lot on the quality of the chocolate and using flavoured chocolate adds a delicious twist, why not try orange chocolate or mint?
