This meal was so easy it doesn't warrant a recipe and ingredients list. Here's how it goes!
Peel and par boil some potato chopped into wedges. Drizzle with oil, sprinkle with salt and pepper, paprika and a little chili powder. Then pop in a hot oven for approximately 20mins.
Use Jus-Rol Ready Rolled Puff Pastry Sheets (no dairy!) smother with a layer of tomato passata or puree and top with your favourite toppings. I chose mushroom, bacon, garlic and basil. Put in a medium oven for 20mins.
Mix up a combination of peas, tomatoes, spring onion and herbs (I used basil, thyme and a pinch of mint).
The pastry was crisp and light, the toppings full of flavour, the potatoes filling and the salad healthy and refreshing. Not bad considering the peas, tomatoes and herbs were grown at home. Next year I will definitely be growing more of my own herbs, salad, fruit and vegetables.
A quick and easy way to make a tasty meal without dairy (suitable for vegans, made in a factory where other products contain dairy). There are so many toppings to use you can just pick your favourites and pop in the oven!
