Childhood Truffle Recipe

 
Some time last night around about 9.30pm my hubby announced he was peckish! This is usually followed by him rummaging in the cupboards before settling on a peanut butter sandwich. However, s I had several orders to package and was also thinking of my sweet tooth I decided to make something. Not the usual time I would start baking but since little one got here its a great time to get things done!

I happened to open the first recipe folder I ever created and a found the best recipe. It is so old that not only had I written it in black fountain pen it also came complete with spelling mistakes, ingredients list and costings!
 
120g dairy free margarine
120g icing sugar
30g cocoa powder
1/2 cup sultanas
60g dessicated coconut and extra for coating
10 gluten and dairy free biscuits 
 
Crush the biscuits into large crumbs
Cream the margarine and sugar together
Add the coconut, fruit, cocoa and biscuit crumbs.
Stir the mixture well
Roll into balls and roll in the coconut
Leave to set in the fridge for 5 mins
 
With recipes like this its no wonder I grew up with such a sweet tooth!
