Peppermint Creams

An old favourite that is so easy to make and still irresistible as an adult!

1 tsp oil for greasing
1 egg
8-10 oz icing sugar
green food colouring
peppermint essence

  • oil a piece of greaseproof paper
  • separate the egg and keep the white
  • beat the white until lightly mixed
  • sieve the icing sugar into a bowl
  • beat the egg into half the icing sugar
  • add a few drops of food colouring
  • add the peppermint essence
  • mix well
  • gradually add the rest of the icing sugar and mix until stiff
  • use a little more icing sugar to roll out the mixture and cut into shapes
  • leave to dry and store in an airtight container (if they last that long!)
