Chocolate, Date and Walnut Loaf

All this cake is getting a bit silly. I love cake and we eat everything in moderation but just recently it does seem like we have eaten more cake than anything else. I promise there are plenty of other foods in there too, veggies, fruit, meat, nuts, pulses and carbohydrates. However, this post is about cake. Made solely because we extra dates leftover from a lamb tagine!



4oz Butter replacement (I use Pure sunflower)
4oz light brown sugar
2 eggs beaten
1/2 teaspoon xanthum gum
1/2 teaspoon baking powder
1 teaspoon vanilla essence
4oz gluten free self raising flour (I use Doves Farm)
1oz cocoa powder ( I use Tesco own, please check for allergens)
a handful of dates
a handful of walnuts plus some for decorating

  • Blend the butter replacement with the sugar
  • Mix in the eggs and vanilla essence
  • Mix the flour, cocoa powder, xanthum gum and baking powder while dry to fully incorporate then beat in to the mixture
  • Mix in the dates and walnuts (taking care not to break them down too small if you are using a food processor)
  • Place in a lined loaf tin
  • Bake at 180 C for approx 15 mins
  • Add the extra walnuts a couple of minutes before taking the cake out (they will need to be pushed into the top of the cake)
  • Try not to eat before its cooled, this cake does improve in flavour over the subsequent days!
