Halloween Cupcakes and Chocolates



These cupcakes are simple, tasty and great fun. There will be many more glamorous cupcakes with more perfect piping, scarier designs or cleverer colour schemes. The idea of these cupcakes is that they are free of dairy, lactose, wheat and gluten and anyone can make them!

Basic Cupcake Recipe

6oz Pure sunflower spread
6oz caster sugar
3 eggs
6oz Doves Farm gluten free self raising flour
1/2 teaspoon xanthum gum
1 tablespoon vanilla essence
2 tablespoons rice milk (or similar dairy free alternative, see here, http://www.lovelactosefreelife.blogspot.co.uk/2013/09/a-glass-of-milk.html )

Cream the sunflower spread and sugar
Beat in the eggs 
Fold in the flour and xanthum gum
Mix in the vanilla essence and rice milk
Spoon into cake cases mking sure there is a similar amount in each
Bake at 180C for approx 15-20 mins

If you would like to make them more interesting you can mix in chocolate drops (for extra chocolatey surprise), dried fruit (raisins make great dead flies!) or fresh fruit (raspberries make convincing gore!) before placing in cake cases. Some of these had strawberry jam piped into the centre before baking to make gooey, oozing centres.

No Butter, Cream Icing Recipe

2oz Stork block (Stork in a tub contains dairy but as a block is dairyfree)
4ozg Pure sunflower spread
6ozg icing sugar
1 teaspoon food colouring of choice

Blend cold Stork margarine with Pure sunflower spread. You want to combine them evenly without over working them as they become too soft. Gradually mix in sieved icing sugar. Finally mix in colouring. Too much will cause the mix to split or become too soft to pipe. 



Chocolate Shapes and other toppings

We sell the chocolate mould for these spooktacular Halloween shapes at www.lovelactosefreelife.co.uk. These were made by slowly melting Plamil chocolate drops in a bain marie. Then pouring in to the mould to set in the fridge.



You could use any of the fabulous freefrom chocolate we sell in the same way (white chocolate is the only difficult alternative to melt evenly due to the ingredients). 



Our chocolate moulds also work well with added decoration such as Dr Oetker Sugar Sprinkles placed at the bottom before adding the melted chocolate. You can also decorate the finished chocolates with plain white icing or Dr Oetker ready made Writing Icing.
