I never knew how easy it was to make you own rice pud! This recipe has been adapted from the instructions on the packet and is great for a filling winter pud accompanied with fruit (or chocolate maybe!).
50g pudding rice
600ml coconut milk
25g caster sugar (you could use any sweetener of choice)
sprinkle of mixed spice
Mix all the ingredients and place in a heat proof dish.
Bake at 160C for 2-2 1/2 hrs no need to stir again
Keep an eye on it so that it doesn't become too dry and take it out when it has a nice bubbly browned skin on top.
