1 cup flour blend – 7/8 Doves SR flour and 1/8 polenta/maize flour
1/4 teaspoon teaspoon xanthum gum
6 tbsp soft margarine
6 tbsp firmly packed brown sugar
¼ cup granulated sugar
1 medium egg
100gms melted dairy free chocolate
1 cup dairy free chocolate drops/ chop up another 100 gm bar of chocolate!
Combine flours and xanthum gum
Melt chocolate in a bowl over hot water
Combine margarine, and sugars and beat until creamy then add the eggs and beat again.
Gradually add the melted chocolate and then the flour mix.
Finally add the chocolate drops/or pieces.
Line a baking tray with greaseproof paper and put dessert spoon size portions of mix on to the tray. Smooth out to an even shape through out.
Cook for about 9 - 12 minutes – no longer as they burn easily. They will be cooked when the top just starts to craze.
Leave to cool on a wire tray – if you can resist them!
