With my Free From Fortnight Fundraiser looming (Monday 15th September) I decided to make pancakes today without egg, dairy or gluten!
I hope you enjoy these pancakes as much as I did. They do taste mildly of banana but they could be made with apple if you dislike or can't tolerate banana.
125g plain flour (Doves Farm)
1 medium sized ripe banana (or cup of apple puree)
250ml rice milk
In a large bowl mash the banana with a fork (or tip apple puree into the bowl)
Add the flour and salt to the bowl begin to combine some of the flour with the banana using the fork (or apple)
Add the rice milk a little at a time while mixing together with the banana and flour
Keep mixing until evenly combined
Cook in a medium hot pan lightly greased with oil
