Gingerbread

This classic Christmas favourite is great for any time of year and great fun to decorate with kids. Amazingly it can also be made freefrom the EU top 14 allergens :D



125g Pure sunflower spread
75g dark sugar
25g caster sugar
3 tbsps golden syrup
325g gluten free self raising flour (Doves Farm)
1/2 tsp bicarbonate of soda
1/2 tsp xanthum gum
3 tsps ground ginger

Melt the spread, sugar and syrup in a pan until combined
Sieve the dry ingredients into a large bowl
Add the melted mixture to the dry
Stir until combined
Gather together into a dough, roll out and cut into shapes
Bake on a try at 170C (160C fan) for approximately 10mins
