Pine Nut Crackers

These pine nut crackers satisfy the cravings for snacking over the festive period and they are also a fabulous addition to hummus, olives, or antipasti of all types.

They are easy to make and keep very well in an airtight container. You could also substitute the pine nuts for tree nuts if you wish for variety.

1 1/4 cups Doves Farm plain flour
1/8 cup maize meal (flour)
2 tsp brown sugar 
1/4 tsp salt
3 tbsp Pure sunflower spread
1/4 cup water (roughly)
1/2 tsp xanthum gum
1/2 tsp bicarb of soda
50 - 100 grams pine nuts

Mix all dry ingredients thoroughly including the pine nuts.  
Add water until you can pull together in a ball. 
Divide into 2 and roll between greaseproof or cling film until 1/8 inch thick. Cut into squares with pizza cutter or knife. Transfer onto a baking tray - greaseproof is good as you can leave them on it!  
Bake in oven at about 180 for 12 - 15 mins until they are golden in colour.
