Snowmen Cupcakes


Such fun!

I love Christmas and these cute little sponge cakes are a fun and easy way to celebrate the festive season.

Sponge Ingredients

6 oz caster sugar
3 oz coconut oil
3 oz Pure Sunflower
3 eggs
1 tbsp vanilla essence
6 oz Doves Farm self raising flour
1/2 tsp xanthum gum


To Decorate

icing sugar
cool water
food colouring
currents
desiccated coconut

Recipe

Blend sugar, sunflower spread and coconut oil
Beat in eggs
Add vanilla essence
Fold in flour and xanthum gum
Spoon into cake cases
Bake at 170 C for 10-15 mins
Cool before decorating
Mix icing sugar with drops of food colouring to make noses
Mix icing sugar and water to a thin paste
Spread a little icing over the cake
Sprinkle on coconut
Dip currents and noses in icing to stick on eyes
Voila!

  4. Thank you so much. We all enjoyed making them and they are very light and fluffy which I am assuming is due to the coconut oil. I will be playing with it some more :)
