Honey and Ginger Oaty Biscuits with Salted Vanilla Cashew Nut Butter

Well there's a title I didn't think I would be writing a few years ago!

These little biscuits with a blob of topping could be defined grandly or simply but either way they are very tasty and enjoyed by all in our family.

Ingredients for the Biscuits

100g glutenfree oats
100g Doves Farm plain flour
25g caster sugar
1 tbsp runny honey
1 tsp ginger
75g coconut oil (melted)

Blitz the oats in a food processor first to make a fine flour
Add the other ingredients and mix
Pull into a dough with your hands
Roll out the dough between two sheets of cling film
Cut into biscuit shapes (anything too complicated may be difficult to handle)
Bake at 180C for approximately 10mins or until lightly browned
They may be crumbly while warm but solidify when cooled

I added 2 tsp vanilla essence and a pinch of salt to taste
The blending process is very hard on your machine and I had to push down the sides regularly. The healthy foodie gives the best description as you do feel like the process will never work, but be patient!
